I was wondering, how do other people get around this in contract forms with their clients? I was thinking of just reverting to a standard consultancy contract, but not sure if that will cover all our bases.

I know the DSDM people have written interesting stuff about how agility affects contracts and the procurement process, so I had a quick look via Google and found this:
You have to register to download their sample contract - I haven't done that, so I haven't seen it - they are good people and signatories to the Agile Manifesto, so I hope it will be of use to you.
