+1. I would like to know of a few as well.
I know that Buildr uses RSpec, been meaning to look into that as part of my investigations into it.
You might want to send this to the rspec-users mailing list too, unless you are specifically looking for RSpec on Rails projects.
Rubinius uses it heavily and is open source.

I would suggest you to check out the peepcode screencasts. They have one about testing the models and another one for the controllers. They helped me a lot to clarify the basic rspec and bdd concepts.
